Ingredients

  • 1 can of butter beans, drained
  • 500g prawns, peeled and deveined
  • 2 tbsp butter
  • 2 cloves of garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant.

  2. Add the prawns to the skillet and cook until they turn pink and are cooked through, around 3-4 minutes. Remove the prawns from the skillet and set aside.

  3. In the same skillet, add the drained butter beans and stir to coat them in the garlic butter. Cook for 2-3 minutes.

  4. Pour in the chicken broth and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld together.

  5. Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste.

  6. Add the cooked prawns back to the skillet and cook for an additional 2-3 minutes to heat them through.

  7. Remove from heat and garnish with chopped parsley.

  8. Serve the creamy butter beans and quick fried prawns hot.
