Ingredients

  • 1 pound of prawns, peeled and deveined
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Cook until the vegetables are tender, about 5 minutes.

  2. Add the potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are cooked through, about 15-20 minutes.

  3. While the soup is simmering, season the prawns with salt and pepper. In a separate pan, heat some oil and cook the prawns until pink and cooked through, about 2-3 minutes per side.

  4. Using a potato masher or a fork, mash the potatoes in the pot to thicken the soup. Stir in the heavy cream and cooked prawns. Cook for an additional 5 minutes, until heated through.

  5. Season the chowder with salt and pepper to taste. Serve hot, garnished with fresh parsley.
