  • 6 cups fresh baby spinach leaves
  • 1 cup sliced mushrooms
  • 1/2 cup pomegranate seeds
  • 1/2 cup chopped walnuts
  • 1 medium-sized apple, sliced thinly
  • For Dressing:
  • 3 Tbsp olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine spinach, mushrooms, pomegranate seeds, walnuts, and sliced apple.

  2. Whisk olive oil, apple cider vinegar, honey, salt and pepper. Drizzle and mix well.

  3. Serve fresh, and enjoy!
