Ingredients

  • 1 sweet potato, peeled and cubed
  • 1 parsnip, peeled and cubed
  • 1 turnip, peeled and cubed
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper
  • 6 cups mixed greens
  • 1/4 cup pecans, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese crumbles
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat oven to 400°F.

  2. Toss sweet potato, parsnip, turnip, and red onion in olive oil and season with salt and pepper.

  3. Roast vegetables for 30 minutes, flipping halfway through.

  4. Assemble salad with mixed greens, roasted vegetables, pecans, dried cranberries, and feta cheese.

  5. Drizzle with balsamic vinaigrette before serving.
