How To Make Tofu Salad

Ingredients
- 1 package of firm tofu, drained and cubed
- 4 cups of mixed greens
- 1 carrot, shredded
- 1 cucumber, sliced
- 1 bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- ½ cup of cherry tomatoes, halved
- ¼ cup of chopped fresh cilantro
- ¼ cup of chopped fresh mint
- ¼ cup of roasted peanuts
- For the dressing:
- 2 tbsp of soy sauce
- 1 tbsp of rice vinegar
- 1 tbsp of sesame oil
- 1 tbsp of honey
- 1 clove of garlic, minced
- 1 tsp of grated ginger
Instructions

In a large salad bowl, combine the mixed greens, carrot, cucumber, bell pepper, red onion, cherry tomatoes, cilantro, mint, and roasted peanuts.

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger to make the dressing.

Add the tofu to the salad bowl and drizzle with the dressing. Toss gently to combine.

Serve the tofu salad chilled and enjoy!
