Ingredients

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 8 oz mozzarella cheese, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the kidney beans, garbanzo beans, black beans, cherry tomatoes, red onion, parsley, and mozzarella cheese.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss until well coated.

  4. Serve immediately or refrigerate for an hour to allow the flavors to meld together.
