Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 can of cannellini beans, drained and rinsed
  • 1 cup of cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 1/2 cup of crumbled feta cheese
  • for the dressing:
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of fresh lemon juice
  • 1 clove of garlic, minced
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, kidney beans, cannellini beans, cherry tomatoes, red onion, parsley, mint, and feta cheese.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss to coat evenly.

  4. Serve chilled or at room temperature.
