- 2 cups grated carrots
- 2 cups thinly sliced red cabbage
- 1 small red onion, thinly sliced
- 1/4 cup white vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- salt and pepper to taste
Instructions

In a large bowl, combine the grated carrots, sliced red cabbage, and red onion.

In a separate small bowl, whisk together the white vinegar, olive oil, honey, dijon mustard, salt, and pepper.

Pour the dressing over the carrot, cabbage, and onion mixture and toss until well coated.
