Ingredients
- 1/2 head of green cabbage, thinly sliced
- 1/2 head of red cabbage, thinly sliced
- 1 large carrot, grated
- 1/2 cup crushed pineapple
- 1/2 cup shredded coconut
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced green onions
- dressing:
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1/2 teaspoon grated fresh ginger
- salt and pepper to taste
Instructions

In a large bowl, combine the green cabbage, red cabbage, carrot, pineapple, coconut, cilantro, and green onions.

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, rice vinegar, honey, ginger, salt, and pepper until well combined.

Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
