Ingredients

  • 1 cup millet
  • 2 cups almond milk
  • 2 cups mixed berries
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds
  • 1/4 cup fresh mint leaves

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the millet and reduce heat to low. Cover and simmer for 20 minutes, or until the millet is cooked and tender.

  2. In a separate saucepan, combine the almond milk, mixed berries, honey, and vanilla extract. Bring to a simmer and cook for 5 minutes, until the berries are soft and the mixture has thickened slightly.

  3. Once the millet is cooked, remove from heat and stir in the berry compote.

  4. Serve the millet porridge hot, topped with sliced almonds and fresh mint leaves.
