How To Make Runner beans & charred leeks with vinaigrette

Ingredients
- 1 pound runner beans, trimmed and cut into bite-sized pieces
- 2 leeks, cleaned and sliced into thick rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 tablespoon fresh parsley, chopped
Instructions

Preheat a grill or griddle pan over high heat.

Toss the runner beans and leeks with 1 tablespoon of olive oil, salt, and pepper.

Place the beans and leeks on the grill or griddle pan and cook until charred and tender, about 8-10 minutes, turning occasionally.

In a small bowl, whisk together the white wine vinegar, Dijon mustard, garlic, 1 tablespoon of olive oil, salt, and pepper.

Transfer the cooked beans and leeks to a serving dish and drizzle with the vinaigrette.

Sprinkle with fresh parsley and serve.
