Ingredients

  • 1 pound runner beans, trimmed and cut into bite-sized pieces
  • 2 leeks, cleaned and sliced into thick rounds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat a grill or griddle pan over high heat.

  2. Toss the runner beans and leeks with 1 tablespoon of olive oil, salt, and pepper.

  3. Place the beans and leeks on the grill or griddle pan and cook until charred and tender, about 8-10 minutes, turning occasionally.

  4. In a small bowl, whisk together the white wine vinegar, Dijon mustard, garlic, 1 tablespoon of olive oil, salt, and pepper.

  5. Transfer the cooked beans and leeks to a serving dish and drizzle with the vinaigrette.

  6. Sprinkle with fresh parsley and serve.
