Ingredients

  • 4 courgettes, sliced lengthwise
  • 200g runner beans, trimmed
  • 200g ricotta cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill pan or barbecue to high heat.

  2. Place the courgette slices and runner beans on the grill and cook for about 5 minutes, until charred and tender.

  3. Remove from the grill and transfer to a serving plate.

  4. Drizzle with olive oil and season with salt and pepper.

  5. Dollop the ricotta cheese on top of the vegetables.

  6. Serve as a side dish for a main course or as a light lunch.
