How To Make Seared Tuna & Anchovy Runner Beans

Ingredients
- 4 tuna steaks
- 2 tbsp olive oil
- salt and pepper, to taste
- 1 lb runner beans, trimmed and halved
- 2 cloves garlic, minced
- 4 anchovy fillets, chopped
- 2 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
Instructions

Season the tuna steaks with salt and pepper. Heat 1 tbsp of olive oil in a large skillet over high heat.

Add the tuna steaks to the skillet and sear for 2-3 minutes on each side for medium-rare. Remove from the skillet and set aside.

In the same skillet, heat the remaining olive oil over medium heat. Add the runner beans and garlic, and sauté for 5-7 minutes until the beans are tender-crisp.

Stir in the anchovy fillets and lemon juice, and cook for an additional 2 minutes.

Serve the seared tuna over a bed of the anchovy runner beans. Garnish with fresh parsley.
