How To Make Chargrilled Vegetable Salad

Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 eggplant
- 1 red onion
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp balsamic vinegar
- 2 cups mixed salad greens
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh basil
Instructions

Preheat the grill to medium-high heat.

Slice the bell peppers, zucchini, eggplant, and red onion into 1/2 inch thick slices.

In a bowl, toss the vegetables with olive oil, salt, and black pepper.

Grill the vegetables for about 5 minutes on each side, or until nicely charred and tender.

Remove the vegetables from the grill and let them cool slightly.

Cut the grilled vegetables into bite-sized pieces and transfer them to a large bowl.

Drizzle the balsamic vinegar over the vegetables and toss to coat.
