Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 eggplant
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp balsamic vinegar
  • 2 cups mixed salad greens
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Preheat the grill to medium-high heat.

  2. Slice the bell peppers, zucchini, eggplant, and red onion into 1/2 inch thick slices.

  3. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

  4. Grill the vegetables for about 5 minutes on each side, or until nicely charred and tender.

  5. Remove the vegetables from the grill and let them cool slightly.

  6. Cut the grilled vegetables into bite-sized pieces and transfer them to a large bowl.

  7. Drizzle the balsamic vinegar over the vegetables and toss to coat.

  8. Add the mixed salad greens, crumbled feta cheese, and chopped basil to the bowl and gently toss to combine.

  9. Serve the chargrilled vegetable salad as a side dish or as a main course.
