How To Make Chargrilled Chicken & Kale Caesar Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 bunch of kale, stems removed and leaves torn into bite-sized pieces
- Caesar salad dressing, to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Croutons, for serving
- Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over medium-high heat.

Season the chicken breasts with salt and pepper. Grill for 6-8 minutes per side, or until cooked through. Let the chicken rest for 5 minutes, then slice into thin strips.

In a large bowl, massage the kale with a little bit of salt for a minute to soften it. This will make it more tender and easier to eat.

Add the cherry tomatoes, Parmesan cheese, and grilled chicken to the bowl with the kale.

Drizzle Caesar salad dressing over the salad and toss until well combined.

Serve the salad topped with croutons for some extra crunch.
