Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of garlic powder
  • 2 cups of mixed salad greens
  • 1/4 cup of sliced almonds
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of crumbled feta cheese
  • dressing:
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of lemon juice
  • 1 tablespoon of dijon mustard
  • 1 teaspoon of honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the cauliflower florets with olive oil, salt, black pepper, paprika, and garlic powder.

  3. Spread the seasoned cauliflower evenly on a baking sheet and roast for 20-25 minutes, until golden brown and tender.

  4. In a small bowl, whisk together the dressing ingredients until well combined.

  5. In a large salad bowl, combine the roasted cauliflower, mixed salad greens, sliced almonds, parsley, and feta cheese.

  6. Drizzle the dressing over the salad and toss to coat everything evenly.

  7. Serve the warm cauliflower salad immediately and enjoy!
