  • 8 oz pasta
  • 2 cups broccoli florets
  • 8 oz cooked salmon fillet, flaked
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste


  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large pot of boiling water, blanch the broccoli florets for 2 minutes. Drain and rinse with cold water.

  3. In a large mixing bowl, combine the cooked pasta, blanched broccoli, flaked salmon, sunflower seeds, red onion, parsley, and Parmesan cheese.

  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  5. Serve the salad chilled or at room temperature.
