How To Make Broccoli Pasta Salad with Salmon & Sunflower Seeds

Ingredients
- 8 oz pasta
- 2 cups broccoli florets
- 8 oz cooked salmon fillet, flaked
- 1/4 cup sunflower seeds
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large pot of boiling water, blanch the broccoli florets for 2 minutes. Drain and rinse with cold water.

In a large mixing bowl, combine the cooked pasta, blanched broccoli, flaked salmon, sunflower seeds, red onion, parsley, and Parmesan cheese.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
