Ingredients

  • 2 heads of broccoli, cut into florets
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sunflower seeds
  • 1/4 cup raisins
  • 1/4 cup crisp bacon, crumbled
  • 1/4 cup Parmesan cheese, grated
  • dressing:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large pot of salted boiling water, blanch the broccoli florets for 2 minutes. Drain and rinse under cold water to stop the cooking process. Let cool.

  2. In a large bowl, combine the blanched broccoli, red onion slices, cherry tomatoes, sunflower seeds, raisins, crisp bacon, and Parmesan cheese.

  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined. Pour the dressing over the broccoli mixture and toss to coat evenly.

  4. Allow the salad to marinate in the refrigerator for at least 30 minutes before serving. This will help the flavors develop and the broccoli to become crispy.

  5. Serve the crispy broccoli salad chilled and enjoy!
