Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1/4 cup red onion, finely chopped
  • 1/2 cup diced cherry tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • dressing:
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the broccoli, cauliflower, red onion, cherry tomatoes, parsley, cheddar cheese, sunflower seeds, and dried cranberries.

  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Serve immediately or refrigerate for at least 1 hour to allow the flavors to meld together.
