How To Make Blackberry Salad

This blackberry salad is filled with fresh berries and drizzled with a creamy apricot sauce. Whip up this unique and tasty salad in just 20 minutes!

  • 4cupsmixed salad greens
  • ½cupmixed herbs,mint, dill, cilantro, basil, parsley
  • 1cupblackberries
  • 2apricots,pitted, sliced
  • 2corn ears,cooked, kernels sliced off the cobs
  • 3small yellow beets,or 2 large, roasted
  • ¼cupfeta cheese,crumbled
  • ¼cupalmonds,toasted, sliced

For Dressing:

  • 1large ripe apricots,or 2 small, pitted
  • 2tbspolive oil
  • 1tbspred wine vinegar
  • 1tbsphoney
  • kosher salt and pepper,to taste
  • 2tsppoppy seeds


  1. Combine the greens, herbs, blackberries, apricots, corn, beets, feta, and almonds to a large bowl.


  1. Place the apricots, olive oil, vinegar, and honey in the bowl of a food processor. Puree to a smooth dressing.

  2. Season to taste with kosher salt and pepper, then stir in the poppy seeds.

  3. Pour the dressing over the salad, then toss gently to coat.

  4. Serve, and enjoy!
