How To Make Barbecued Chilli Duck & Pineapple Salad

Ingredients
- 4 duck breasts
- 1 pineapple, peeled and sliced
- 2 red chillies, deseeded and chopped
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 2 tablespoons of honey
- 2 tablespoons of sesame oil
- Juice of 1 lime
- Salt and pepper to taste
- 200g mixed salad leaves
- 1 red onion, sliced
- Handful of fresh mint leaves, roughly chopped
- Handful of fresh cilantro leaves, roughly chopped
- Lime wedges, for serving
Instructions

Preheat your barbecue to medium-high heat.

In a small bowl, mix together the chopped chillies, minced garlic, soy sauce, honey, sesame oil, lime juice, salt, and pepper to make the marinade.

Place the duck breasts in a shallow dish and pour the marinade over them. Use your hands to coat the duck evenly. Let it marinate for 10 minutes.

While the duck is marinating, grill the pineapple slices on the barbecue for about 2-3 minutes per side until they are caramelized and slightly charred. Remove them from the heat and set aside.

Place the marinated duck breasts on the barbecue and cook for about 5-6 minutes on each side until they are nicely browned and cooked through. Remove them from the heat and let them rest for a few minutes.

Slice the duck breasts into thin strips.

In a large salad bowl, combine the mixed salad leaves, sliced red onion, mint leaves, and cilantro leaves. Toss them together.

Add the grilled pineapple slices and sliced duck breasts to the salad bowl.

Drizzle some of the marinade over the salad and toss everything together until evenly coated.

Serve the Barbecued Chilli Duck & Pineapple Salad with lime wedges on the side.
