How To Make Roasted Chicken with Banana Curry Sauce

Level up your usual juicy roasted chicken with a topping of fruity sweet and spicy curry sauce! It’s an easy meal made in just 30 minutes.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 2large bananas
  • 2tbspcurry powder
  • 2tspground coriander
  • 1tspdry mustard
  • 3tbspbutter
  • 1lime,zested, grated
  • 4tsplime juice
  • tspsalt
  • ½tspfresh ground black pepper
  • ¾cupwater
  • 4chicken breasts,bone in
  • 1tbspfresh parsley,chopped, optional

Instructions

  1. Heat the oven to 450 degrees F.

  2. In a food processor or blender, puree the bananas, curry powder, coriander, dry mustard, butter, lime zest, lime juice, salt, pepper, and ¼ cup of the water.

  3. Make a few deep cuts in each chicken breast and put the breasts in a roasting pan. Pour the curry sauce over the chicken, making sure the sauce gets into the cuts.

  4. Roast in the bottom third of the oven for about 20 minutes, until the chicken is just done.

  5. Remove the roasting pan from the oven and remove the chicken breasts from the pan. There should be plenty of thick sauce in the bottom of the pan.

  6. Set the pan over moderate heat and whisk in the remaining ½ cup of water. Continue to whisk until the sauce is heated through, adding more water for a thinner sauce, if desired.

  7. Serve the chicken breasts with the sauce over them, and enjoy!
