How To Make Lemon Chicken Soup
A light and refreshing soup with tender chicken, tangy lemon, and aromatic herbs.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 6 cups chicken broth
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Cook until vegetables are tender.

Add the chicken broth, lemon juice, lemon zest, thyme, salt, and pepper. Bring to a boil.

Reduce heat to low and add the chicken breasts. Simmer for 15-20 minutes until chicken is cooked through.

Remove chicken from the pot and shred using two forks. Return chicken to the pot.

Serve hot, garnished with fresh parsley.
