How To Make Spelt & Wild Mushroom Risotto

Ingredients
- 1 cup spelt
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz wild mushrooms, sliced
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large saucepan, bring the vegetable broth to a simmer. Keep warm.

In a separate large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.

Add the spelt to the saucepan and cook for 1 minute, stirring constantly.

Add the sliced mushrooms to the saucepan and cook for an additional 2 minutes.

Pour in the white wine and cook until it has evaporated.

Begin adding the warm vegetable broth, 1 cup at a time, stirring frequently and allowing the liquid to absorb before adding more.

Continue adding the broth and stirring until the spelt is tender and creamy, about 20-25 minutes.

Stir in the Parmesan cheese until melted and season with salt and pepper to taste.

Serve the risotto hot, garnished with fresh parsley.
