How To Make Spelt & Wild Mushroom Risotto

Serves:

Ingredients

  • 1 cup spelt
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz wild mushrooms, sliced
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large saucepan, bring the vegetable broth to a simmer. Keep warm.

  2. In a separate large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.

  3. Add the spelt to the saucepan and cook for 1 minute, stirring constantly.

  4. Add the sliced mushrooms to the saucepan and cook for an additional 2 minutes.

  5. Pour in the white wine and cook until it has evaporated.

  6. Begin adding the warm vegetable broth, 1 cup at a time, stirring frequently and allowing the liquid to absorb before adding more.

  7. Continue adding the broth and stirring until the spelt is tender and creamy, about 20-25 minutes.

  8. Stir in the Parmesan cheese until melted and season with salt and pepper to taste.

  9. Serve the risotto hot, garnished with fresh parsley.
