Ingredients

  • 2 cups of basmati rice
  • 1 cup of broad beans, shelled
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 4 cups of vegetable broth
  • 2 tbsp ghee or vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the basmati rice until the water runs clear and soak it in water for 30 minutes. Drain and set aside.

  2. Heat ghee or vegetable oil in a large pot over medium heat. Add the cumin seeds and let them splutter.

  3. Add the chopped onion and minced garlic to the pot and sauté until they turn golden brown.

  4. Add the broad beans and cook for 2 minutes. Then, add the coriander powder, turmeric powder, and red chili powder. Mix well.

  5. Add the soaked and drained rice to the pot and sauté for 2 minutes, coating the rice with the spices.

  6. Pour in the vegetable broth and season with salt. Stir well and bring it to a boil.

  7. Once the mixture comes to a boil, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and all the liquid is absorbed.

  8. Fluff the rice gently with a fork and garnish with fresh coriander leaves before serving.
