Ingredients
- 2 cups of rice
- 4 cups of chicken broth
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 cup of frozen peas
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of ground ginger
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook until softened.

Add the rice and stir to coat it in the vegetable mixture.

Pour in the chicken broth, soy sauce, sesame oil, and ground ginger. Stir well.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.

Stir in the frozen peas and cook for an additional 2-3 minutes, until heated through.
