How To Make Green Beans with Mustard, Lemon & Mint

- 1 lb green beans, trimmed
- 2 tbsp Dijon mustard
- 1 lemon, juiced and zested
- 2 tbsp fresh mint leaves, chopped
- Salt and pepper to taste

In a pot of salted boiling water, blanch the green beans for 3-4 minutes until crisp-tender. Drain and set aside.

In a large bowl, whisk together the Dijon mustard, lemon juice, lemon zest, mint leaves, salt, and pepper.

Add the blanched green beans to the bowl and toss until well coated in the mustard mixture.

Serve the green beans warm or chilled.
