How To Make Pesto & Courgette Pasta Bake

Ingredients

  • 300g pasta (penne or fusilli)
  • 2 medium courgettes, thinly sliced
  • 4 tbsp of pesto
  • 200g mozzarella cheese, grated
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. Preheat your oven to 180°C (350°F).

  3. In a large skillet, sauté the courgette slices with a little olive oil until tender. Remove from the heat and set aside.

  4. In a large bowl, mix together cooked pasta, pesto, sautéed courgettes, mozzarella cheese, and Parmesan cheese. Season with salt and pepper.

  5. Transfer the mixture to a baking dish and spread it evenly.

  6. Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.

  7. Remove from the oven and let it cool for a few minutes before serving.
