Ingredients

  • 1 cup orzo
  • 1 cup rice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the orzo and rice according to package instructions. Set aside.

  2. In a large skillet, heat the olive oil over medium heat.

  3. Add the onion and garlic and cook until softened, about 3 minutes.

  4. Add the carrot, bell pepper, and zucchini. Cook for another 5 minutes until vegetables are tender.

  5. Stir in the dried oregano, dried basil, salt, and black pepper.

  6. Pour in the vegetable broth and bring to a simmer.

  7. Add the cooked orzo and rice to the skillet. Stir to combine everything.

  8. Cook for another 5 minutes, allowing the flavors to meld together.

  9. Remove from heat and sprinkle with grated Parmesan cheese.

  10. Garnish with fresh parsley before serving.
