How To Make Eggless Pasta

Ingredients
- 8 ounces of pasta
- 2 tablespoons of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup of mushrooms, sliced
- 1 can of diced tomatoes (14 ounces)
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil for garnish
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender.

Stir in the diced tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes.

Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes.

Serve the pasta with grated Parmesan cheese and fresh basil.
