Ingredients

  • 12 oz linguine pasta
  • 1/4 cup butter
  • 1 small onion, finely chopped
  • 4 garlic cloves, minced
  • 16 oz sliced mushrooms
  • 1 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package directions and drain.

  2. In a large saucepan, melt butter and cook onions until softened.

  3. Add garlic and mushrooms, cooking until the mushrooms have released their liquid.

  4. Stir in thyme, red pepper flakes, heavy cream, and grated Parmesan cheese.

  5. Simmer for 5-10 minutes or until the sauce has thickened.

  6. Season with salt and pepper to taste.

  7. Combine the cooked pasta with the mushroom Alfredo sauce, and garnish with fresh parsley before serving.
