Ingredients

  • 1 pound ground lamb
  • 1/2 cup dried apricots, finely chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

  1. In a large bowl, combine ground lamb, dried apricots, breadcrumbs, Parmesan cheese, parsley, cumin, coriander, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.

  4. Reduce heat to low and continue cooking for another 10 minutes, or until the meatballs are cooked through and no longer pink in the center.

  5. Serve hot and enjoy!
