Ingredients

  • 1 lb of ground lamb
  • 1/2 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of minced fresh parsley
  • 2 cloves of garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 1/4 tsp of dried oregano
  • 1/4 tsp of dried thyme
  • 1/4 cup of olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground lamb, breadcrumbs, Parmesan cheese, parsley, garlic, lemon zest, lemon juice, salt, black pepper, dried oregano, and dried thyme. Mix well.

  3. Shape the mixture into meatballs, about 1-inch in diameter.

  4. Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches and cook until browned on all sides, about 5 minutes.

  5. Transfer the meatballs to a baking sheet and bake in the preheated oven for 15-20 minutes, or until cooked through.

  6. Serve the lemony lamb meatballs hot with your favorite sauce or as an appetizer.
