Ingredients

  • 4 fish fillets
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup pineapple chunks
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 1/2 cup tomato ketchup
  • 1/4 cup white vinegar
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 cup vegetable oil (for frying)

Instructions

  1. In a bowl, mix flour, cornstarch, salt, and pepper. Coat fish fillets in this mixture.

  2. Heat vegetable oil in a pan. Fry the fish fillets until golden brown and crispy. Remove and set aside.

  3. In another pan, sauté onion and bell peppers until slightly softened.

  4. Add pineapple chunks, tomato ketchup, vinegar, soy sauce, and brown sugar to the pan. Stir well.

  5. Bring the sauce to a simmer and cook for 2 minutes.

  6. Add the fried fish fillets to the pan and coat them with the sauce. Cook for an additional 2 minutes.

  7. Serve the sweet and sour fish with steamed rice.
