- 4 chicken thighs
- 1 lb new potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, combine the chicken thighs, new potatoes, bell peppers, red onion, and minced garlic.

Drizzle the olive oil over the ingredients and sprinkle with dried thyme, rosemary, paprika, salt, and pepper.

Toss everything together until the chicken and potatoes are evenly coated.

Arrange the chicken and potatoes in a single layer in the baking dish.

Roast in the preheated oven for 45 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
