How To Make Instant Pot Thai Pineapple Fried Rice Recipe
A perfect blend of Thai flavours in every bite of delicious fried rice, sweet pineapple, and spicy red pepper!

Ingredients
- 1 tbsp vegetable oil
- 1/2 onion, chopped
- 2 garlic cloves, chopped
- 1 red bell pepper, thinly sliced
- 1 cup frozen peas and carrots
- 2 cups cooked jasmine rice
- 1 cup pineapple chunks, drained
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 tsp red pepper flakes
- 2 green onions, thinly sliced
Instructions

Turn Instant Pot to sauté mode and heat oil.

Add onion and garlic cook until softened.

Add bell pepper, peas, and carrots and cook for 2 minutes.

Add cooked rice and stir well to combine.

Stir in pineapple, soy sauce, fish sauce, brown sugar, and red pepper flakes.

Secure lid and cook on high pressure for 1 minute.

Quick release pressure, and open lid.

Stir in green onions and serve hot.
