Ingredients

  • 1 tbsp vegetable oil
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 1 red bell pepper, thinly sliced
  • 1 cup frozen peas and carrots
  • 2 cups cooked jasmine rice
  • 1 cup pineapple chunks, drained
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 tsp red pepper flakes
  • 2 green onions, thinly sliced

Instructions

  1. Turn Instant Pot to sauté mode and heat oil.

  2. Add onion and garlic cook until softened.

  3. Add bell pepper, peas, and carrots and cook for 2 minutes.

  4. Add cooked rice and stir well to combine.

  5. Stir in pineapple, soy sauce, fish sauce, brown sugar, and red pepper flakes.

  6. Secure lid and cook on high pressure for 1 minute.

  7. Quick release pressure, and open lid.

  8. Stir in green onions and serve hot.
