Ingredients

  • 2 cups cooked white rice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Green onions, for garnish

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  2. Add the shrimp and cook for 2-3 minutes on each side until pink and cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add another tablespoon of oil and sauté the diced onion and minced garlic until fragrant.

  4. Add the mixed vegetables and cook for 2-3 minutes until they start to soften.

  5. Push the vegetables to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until cooked, then mix them with the vegetables.

  6. Add the cooked rice and soy sauce to the skillet. Stir well to combine all the ingredients.

  7. Return the cooked shrimp to the skillet and stir-fry for an additional 2 minutes to heat everything through.

  8. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
