Ingredients

  • 4 boneless pork chops
  • 4 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup of shredded cheddar cheese
  • 1 cup of chicken broth
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • Salt and pepper to taste
  • 2 tbsp of olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Heat the olive oil in a large skillet over medium-high heat.

  3. Season the pork chops with salt, pepper, and paprika. Brown them in the skillet for 2-3 minutes on each side. Remove from skillet and set aside.

  4. In the same skillet, sauté the onion and garlic until translucent and fragrant.

  5. Layer half of the sliced potatoes in a greased casserole dish. Top with half of the sautéed onions and garlic.

  6. Place the browned pork chops on top of the potatoes and onions.

  7. Layer the remaining potatoes, onions, and garlic on top.

  8. Sprinkle dried thyme, salt, and pepper over the casserole. Pour the chicken broth over everything.

  9. Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes.

  10. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 15 minutes or until the cheese is melted and bubbly.

  11. Serve the pork chop and potato casserole hot.
