Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 cup plain Greek yogurt
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a casserole dish.

  2. In a large skillet, sauté the chopped onion and minced garlic over medium heat until softened.

  3. Add the broccoli florets and cook for 3-4 minutes until slightly tender.

  4. Sprinkle the curry powder, cumin, and turmeric over the vegetables and stir to coat evenly.

  5. In a bowl, combine the cooked and shredded chicken with the Greek yogurt. Season with salt and pepper.

  6. Add the chicken mixture to the skillet with the vegetables, stirring to combine well.

  7. Transfer the mixture to the greased casserole dish and spread it out evenly.

  8. Sprinkle the shredded cheddar cheese on top.

  9. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.

  10. Serve hot and enjoy!
