  • 500g boneless chicken, cut into small pieces
  • 2 cups broccoli florets
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, sliced (optional for extra spice)
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 cup coconut milk
  • 2 tablespoons oil
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a large pan or skillet over medium heat. Add onions and sauté until golden brown.

  2. Add minced garlic, grated ginger, and sliced green chili (if using). Cook for a minute until fragrant.

  3. Add chicken pieces to the pan and cook until they are browned on all sides.

  4. In a small bowl, mix together curry powder, turmeric powder, cumin powder, and coriander powder. Add this spice mixture to the pan and stir well to coat the chicken evenly.

  5. Add broccoli florets to the pan and stir to combine.

  6. Pour in coconut milk and season with salt. Stir well and bring to a simmer. Reduce heat to low, cover the pan, and let it cook for about 15 minutes or until the chicken is cooked through and the broccoli is tender.

  7. Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
