Ingredients

  • 1 lb chicken thighs, boneless, skinless, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • Green onions, for garnish
  • Cooked rice, for serving

Instructions

  1. In a bowl, marinate the chicken thighs with soy sauce and oyster sauce for 10 minutes.

  2. Heat vegetable oil in a large skillet or wok over medium-high heat.

  3. Add the chicken and stir-fry until cooked through and browned, about 5-7 minutes. Remove from the skillet and set aside.

  4. In the same skillet, add the sliced onion, bell peppers, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  5. Return the chicken to the skillet and toss with the vegetables. Season with salt and pepper to taste.

  6. Serve the chicken stir-fry over cooked rice. Garnish with green onions.
