How To Make Lemony Chicken Skewers, Herbed New Potatoes, and Apple Coleslaw

Ingredients
- 4 boneless, skinless chicken breasts, cut into chunks
- 2 lemons, zested and juiced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 pound of new potatoes, quartered
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of fresh thyme, chopped
- 2 tablespoons of butter
- 1/2 small green cabbage, shredded
- 1 large carrot, grated
- 1 apple, cored and thinly sliced
- 1/4 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1 tablespoon of apple cider vinegar
- Salt and pepper to taste

In a bowl, combine the chicken, lemon zest, lemon juice, garlic, olive oil, dried oregano, salt, and pepper. Let marinate for 10 minutes.

Preheat the grill or grill pan over medium heat. Thread the marinated chicken onto skewers and grill for 8-10 minutes, or until cooked through.

In the meantime, boil the quartered potatoes in salted water until tender. Drain and return to the pot. Add the butter, parsley, thyme, salt, and pepper. Toss to coat.

In a large bowl, combine the shredded cabbage, grated carrot, and sliced apple. In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to coat.

Serve the grilled chicken skewers with herbed new potatoes and apple coleslaw.
