How To Make Chicken Inasal

Serves:

Ingredients

  • 4 chicken leg quarters
  • 1/2 cup of calamansi juice
  • 1/4 cup of soy sauce
  • 1/4 cup of vinegar
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of lemongrass, chopped
  • 1 tablespoon of brown sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • Bamboo skewers

Instructions

  1. In a bowl, combine calamansi juice, soy sauce, vinegar, minced garlic, grated ginger, chopped lemongrass, brown sugar, salt, and black pepper. Mix well.

  2. Add the chicken to the marinade, making sure to coat each piece evenly. Marinate in the refrigerator for at least 2 hours or overnight for better flavor.

  3. Preheat the grill to medium-high heat.

  4. Remove the chicken from the marinade, reserving the marinade for basting.

  5. Thread the chicken onto the bamboo skewers, starting from the thigh and ending with the drumstick.

  6. Grill the chicken skewers for about 10 minutes per side, basting with the reserved marinade occasionally until cooked through and slightly charred.

  7. Serve the Chicken Inasal hot with steamed rice and a side of atchara (pickled papaya) or sawsawan (dipping sauce).
