Serves:

Ingredients

  • 1small zucchini,sliced ½-inch thick
  • 1red onion,cut into wedges
  • 1bell pepper,cubed
  • 8ozmushrooms,halved
  • 1cupgrape tomatoes

For Marinade:

  • 2tbspolive oil
  • 2tspbalsamic vinegar
  • 1garlic clove,minced
  • 1tbspfresh rosemary,chopped
  • salt and pepper,to taste

Instructions

  1. Place the zucchini, red onion, bell pepper, mushrooms, grape tomatoes, olive oil, balsamic vinegar, garlic, rosemary, salt, and pepper in a large bowl and toss to combine.

  2. Allow to marinate for at least 30 minutes or up to 8 hours.

  3. Preheat grill to medium heat.

  4. Remove vegetables from the marinade, then place them a grilling basket or on a grill mat.

  5. Grill for 8 to 12 minutes or until cooked to desired doneness.

  6. Serve immediately, and enjoy!
