How To Make Courgette, Tarragon & Thyme Galette

Ingredients
- 1 sheet of puff pastry
- 2 medium courgettes, thinly sliced
- 2 tbsp of fresh tarragon, chopped
- 1 tbsp of fresh thyme leaves
- 1 egg, beaten
- 1 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet on a lightly floured surface.

Place the sliced courgettes, tarragon, and thyme leaves on top of the puff pastry, leaving a border.

Drizzle olive oil over the courgettes and season with salt and pepper.

Fold the edges of the puff pastry over the courgettes, pleating as you go.

Brush the beaten egg over the puff pastry.

Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown and the courgettes are tender.

Serve the galette warm or at room temperature.
