How To Make Cheesy Roasted Courgettes

- 4 medium courgettes, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions

Preheat your oven to 425°F (220°C).

In a large bowl, combine the sliced courgettes, olive oil, garlic powder, dried thyme, dried oregano, salt, and black pepper. Toss to coat the courgettes evenly with the seasonings and oil.

Spread the courgette slices out in a single layer on a baking sheet.

Roast the courgettes in the preheated oven for 15 minutes, flipping halfway through, until they are tender and slightly browned.

Remove the baking sheet from the oven and sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the courgette slices.

Return the baking sheet to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
