Mediterranean Tuna, Pepper & Courgette Tart Recipe

How To Make Mediterranean Tuna, Pepper & Courgette Tart

Ingredients

  • 1 sheet of ready rolled puff pastry
  • 1 can of tuna, drained
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 courgette, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste
  • 100g of feta cheese, crumbled
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry and place it onto a baking sheet lined with parchment paper.

  3. In a skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened and slightly caramelized.

  4. Add the bell peppers and courgette to the skillet and cook until they start to soften.

  5. Stir in the tuna, oregano, thyme, salt, and pepper. Cook for another 2 minutes.

  6. Spread the tuna and vegetable mixture over the puff pastry, leaving a small border around the edges.

  7. Sprinkle the crumbled feta cheese on top.

  8. Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown.

  9. Remove from the oven and let it cool slightly before serving.

  10. Garnish with fresh basil leaves.
