Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup sliced black olives
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.

  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on each side, about 5 minutes per side. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 3-4 minutes.

  4. Add the diced tomatoes (with their juice), sliced olives, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Stir well to combine.

  5. Return the chicken breasts to the skillet, nestling them into the tomato mixture. Cover the skillet and simmer for 20 minutes, or until the chicken is cooked through and the flavors are well combined.

  6. Serve the chicken with tomato and olive sauce over cooked pasta or rice. Garnish with fresh basil.
