Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup chicken broth
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken breasts with salt, black pepper, rosemary, thyme, and oregano.

  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.

  4. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, until browned.

  5. Remove the chicken breasts from the skillet and set aside.

  6. In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.

  7. Add the cherry tomatoes, Kalamata olives, and sun-dried tomatoes to the skillet, and cook for 2-3 minutes.

  8. Pour in the chicken broth and bring to a simmer.

  9. Return the chicken breasts to the skillet, spooning the tomato and olive mixture over them.

  10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.

  11. Remove from the oven and sprinkle with fresh basil and grated Parmesan cheese.

  12. Serve the Tuscan chicken hot with your favorite side dishes.
