How To Make Inside-out Chicken Kiev

- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup bread crumbs
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Cooking oil for frying
Instructions

Preheat the oven to 400°F (200°C).

Butterfly each chicken breast by slicing horizontally but not cutting all the way through. Open up the breast like a book.

Pound the chicken breasts with a meat mallet to flatten them to an even thickness.

In a small bowl, mix together the softened butter, minced garlic, parsley, dill, lemon zest, salt, and pepper to make the herb butter filling.

Spread about 1 tablespoon of the herb butter filling onto one side of each chicken breast.

Fold the other side of the chicken breast over the filling and press the edges together to seal.

Dip each chicken breast into the flour, shaking off any excess.

Dip the floured chicken breast into the beaten eggs, allowing any excess to drip off.

Coat the chicken with bread crumbs, pressing gently to adhere.

Heat enough oil in a large skillet over medium heat to shallow fry the chicken breasts.

Fry the chicken breasts for about 3-4 minutes on each side, until golden brown.

Transfer the fried chicken to a baking sheet and bake in the preheated oven for 12-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
